Whats for Supper?

Cajun Meatloaf

We usually do this dish in the oven but decided to throw this recipe in the smoker yesterday. Peppers, onions, celery, garlic, and a few Hatch chilies for good measure sauteed in the pan with a lot of Cajun seasoning.

I use a mixture of about 60% ground chuck and 40% ground pork to make a 2# loaf, all mixed up with the veggies and spices.

I lined a 5 x 7 disposable loaf pan with heavy duty foil and spray with vegetable oil before stuffing it all in and coating with some ketchup.

I set the smoker for 235, after 1 hour the meatloaf is firm enough to take it out of the pan and roll the foil down so the smoke can get all around. I just left it on the rolled down foil on the rack for about 2 hours until the IT hit 155-157 and we're ready to eat after resting for 10 minutes. It turned out juicier than in the oven so I'll definitely do it this way again.

When I'm batching it for a few days while my wife is away taking care of grandkids I get pretty basic. Last night was a beautiful calm one so cheezy brats on the grill, cheezy breadsticks and a cold brew were the way to go. I should have uncovered the pontoon and went for a cruise but the neighbors called with an invite to happy hour in their garage as I was finishing my meal..

Real Simple.........

Use Cans of Joan of Ark Kidney Beans, some regular some spicy. Add chopped Onion, BBQ Sauce, little Brown Sugar. Bake at 350 till bubbling.
 
Supper tonight for us and the neighbors... brisket done on the smoker over mesquite since daybreak, baked beans and potato salad... had fresh strawberries out of the neighbor's patch for dessert but got no pic of them.

Alan.......I only have one shoe....By chance is yours a size 11 left foot, I'm needing one to complete my collection of single shoes i find on the highway....:laugh:....
 

Bummer.....Sometimes you get the Bear, And then sometimes he gets you....

But if you do run across or even over a size 11 Left' Keep me in mind....:D...
 
Ribs Tonight

We have a new wholesale club called BJ's that opened up near us, I found some Swift brand all natural St. Louis ribs that looked great in the package so here we go.

The racks were huge so I had to cut them to fit in my smoker, I used apple and hickory wood
