I don't like the reverse sear method. I sear the steaks on each side for close a minute in the firebox to lock the juices in then put them in the smoker till done. IMO they stay juicier and more tender that way and still get enough smoke.

Couldn’t make up my mind on what I was hungry for, so I threw a bunch of different things on the pit……! That was a lot for this one guy to eat (Can you say, “left-overs”?).

8 ounces extra lean ground meat seasoned and grilled then spread over 2 cups lettuce with a fresh sliced jalapeno and some sliced black olives sprinkled in and a dash of honey dijon dressing. Dinner for one!
