I just bought a 2018 Triglide. What kind of fuel economy should it get running 75 with 2 passengers?

Anything above 30 is good. Most report 30 to 34 at that speed.

Not too far off, Harley specs it at 42.....-But thats probably at 55 MPH..

The mileage is okay until you push that barn door (your trike) through the wind at over 60 to 65 mph. Then the mileage goes south in a hurry.

Like cars, a motorcycle fuel mileage is computed under ideal conditions with a pro rider

Some may get different readings than what the manufacturer states

There is ALWAYS a foot note stating your mileage may differ
