Old World Raspberry Bars

Old World Raspberry Bars
Ingredients:
- 2-1/4 cups all-purpose flour
- 1 cup sugar
- 1 cup chopped pecans
- 1 cup butter, softened
- 1 egg
- 3/4 cup raspberry preserves
- Heat oven to 350º for a glass baking pan, 325 for a dark or non-stick pan.
- Combine all but the preserves in a large bowl. Beat at low speed, scraping the bowl often, until mixture resembles crumbs.
- Reserve 1-1/2 to 2 cups of the crumb mixture; set aside.
- Press remaining crumb mixture on the bottom of a greased 8x8 baking dish. (I usually use one that is about 8x10, it works well without increasing the recipe)
- Spread preserves evenly over that.
- Scatter the reserved crumbles over preserves.
- Bake for 40 - 50 minutes, or until lightly browned.
- Cool completely, cut into bars.
- Bars will keep for 3-5 days, and will freeze well for up to a month.
