It varies dramatically with the test tool used, battery strenght and ambient temperature. On our Snap-on gauges it's typically around 180-190. We would not normally tear a motor down unless the numbers were below H-D specs and then only after checking leak down and some other tests to confirm that the low numbers are real (trying other gauges for example).

You won't be able to get a true CCP with the S&S easy start cams, part of the easy start feature is holding the exhaust valve partialy off the seat to bleed off compression while the engine is at cranking speed then it retracts once the engine is running. Your CCP without the easy start feature should be in the upper 190's with those cams.
