Figured I wanted some St Louis style ribs for dinner tonight.

Got a nice spare rib.

Trimmed in the style of a St Louis cut and pulled the membrane from the back.

Dry rubbed it with some rub I got from Jacks BBQ in Nashville.

After 6 hours in the smoke with some Hickory and Peach wood, a little glaze with some Shed Original Southern Sweet sauce. Some mighty tasty ribs, nice bark and nice little heat from the dry rub.

Way to go, looking good. :10: I've got the same type of knife. I like to leave the tenderloin on my ribs. That's hard to find them that way in the restaurants.

I'm a knife junky:D. I have a couple of those boning knives, got them from a guy at work for a cheap price.
