For Supper I have my favorite stir-fried pork intestine with green peppers for those who want to try

Ingredients:
500g pork intestine
2 green peppers, sliced
1 onion, sliced
3 cloves garlic, minced
2 tablespoons soy sauce
1 tablespoon oyster sauce
1 tablespoon rice vinegar
1 teaspoon sugar
1 tablespoon cornstarch (optional for thickening)
2 tablespoons vegetable oil
Salt and pepper to taste

Instructions:

Prepare the pork intestine: Clean the pork intestine thoroughly. Boil it in water with a bit of salt for about 20 minutes, then drain and cut into bite-sized pieces.

Cook the pork intestine: Heat oil in a pan or wok over medium-high heat. Add the pork intestine and stir-fry until slightly crispy, about 5-7 minutes.

Add vegetables: Toss in the garlic, onion, and green peppers. Stir-fry for another 2-3 minutes.

Season: Add soy sauce, oyster sauce, rice vinegar, and sugar. Stir well to coat the ingredients. You can add a bit of water if you prefer a saucier dish.

Thicken (optional): If you want the sauce thicker, mix cornstarch with a bit of water and stir it into the pan.

Finish: Taste and adjust with salt and pepper. Serve hot!

This dish is savory with a slight tanginess from the vinegar and a little sweetness from the sugar. It’s great with rice!
