Slice Spam into 3/8 inch thick slices, and fry in butter until it begins to brown. Keep it warm while you cook your eggs. Or use two pans and cook Spam and eggs simultaneously if you are the adventuresome type. Fry or scramble two large eggs per serving. If scrambling, add about a teaspoon of water to the bowl as you whip the eggs. Fry eggs in butter to personal taste. Season with salt and black pepper. Place two slices of the fried Spam on a serving plate and sprinkle lightly with Louisiana Hot Sauce. Place eggs in a vacant spot. Serve with hot biscuits or toast, hash browns or grits optional. You can use picante sauce to replace the hot sauce of you like.

Katfish that is a wonderful dish, but Spam is like ketchup it is good with anything. Besides is it not one of the health food groups?

Yum, yum...what time's breakfast? The Bride thinks I'm nuts, but I love Spam! Oh...Hot Sauce is NEVER OPTIONAL!

I'm just jealous of the camping on the river bank!!!!! Good food is always a plus though ;)

Never developed a taste for Spam. Maybe if it had a different name like Hamm or Hammy or Hummmm or ...well anything but Spam. The name just isn't all that inviting to me...besides that they put like a 1/2 LB of salt in every slab of that stuff! :p

The low salt version is actually pretty good.
I make it a messy sammich - put the Spam ON the toast, then a slice of cheese, then the eggs (over medium), add with a sprinkle of hot stuff or salsa, then lid it with the other toast and dig in!
Better bring an extra napkin or three...

I remember my brother and me making faces at each other, surreptitiously of course, across the table when we were served spam. Neither of us ever learned to like it, even when my mom tried to disguise it under sweet 'n sour sauce. Yeccchhhh. :p

when we were kids Spam was cheap----now days it's a rich mans food-------
Still eat it occationally--try putting orange marmalade on it----ummmmm ummmm good !!

For me, the very best sandwich in the world is scrambled egg, slices of tomato, and several strips of bacon on white bread with a glass of cold milk on the side. Pure heaven!!

(Second best sandwich is liverwurst on white with dill pickle chips and Miracle Whip. Gotta have ginger ale with this one! Sounds yuck, tastes delish!)

ScalpHunter says his fav is sliced white meat turkey, stuffing, mayo and cranberry sauce all piled on white bread. It's like T'giving dinner in your hands!

(Yes, we do eat wheat & rye breads, but these are special treats!)
