I heard of a few ways to do this anyone know a good way that they have good results with ?

Heat oven to 450 degrees. Place adequate liquid (water and beef bullion) in
the bottom of the pan and cover roast with tin foil. Cook for 20-25 minutes.
Reduce heat to 350 degrees. Cook 10-12 minutes per pound. Uncover for
the last half hour. Take roast out of the oven 5-10 degrees before desired
temperature. Let roast sit on the counter for 20-25 minutes before carving.

Need to be sure to use a Meat Thermometer for best results

- Rare 125ºF - 130ºF Red center, gray surface, soft, juicy
- Medium rare 130ºF - 140ºF Pink center, gray-brown surface
- Medium 140ºF - 150ºF Slightly pink center, becomes gray-brown
towards surface
- Medium well 150ºF - 160ºF Mostly gray center, firm texture.
- Well done 160+ ºF Gray-brown throughout.

I use my Popiel "Set It and Forget It" rotisserie. I just set it for the recommended time per pound and when it gets within ten minutes I check it with the meat thermometer and remove it at 145 degrees and let it stand about 10 minutes before slicing. I don't use any seasoning at all except for a heated can of beef broth mixed with the drippings to use as sort of a gravy. I think the "bone in" roast is better but that's just a personal preference. Other than the Kitchen Aid stand mixer the rotisserie is my favorite appliance in the kitchen!! I've had it for about 15 years and use it for roasts, chicken and turkey. It will cook a 14 pound turkey to perfection in 2 hours and 20 minutes....and it's easy as falling off a log!!! Clean-up is a snap!!

I did this
weighted the roast 10lbs
multiplied it by 5 = 50 min. (if it is a 4 lb roast then it would be 20 min. etc)
Oven preheated to 500 deg.
soften a stick of butter and smear it all over the roast Ends included
season with garlic powder , Kosher salt, and what ever else you like
Place roast in Oven for 50 min.
Turn off the oven after 50 min ( that is for a very pink roast add 5 min to get a more well done roast )
Do not open the door ( don't even touch the handle )
Leave it for 2hours
Remove it and slice it up.
Came out perfect

Dear John: sounds delicious, , Now I'll take 2 slices rare, baked potatoe, green beans, salad with garlic dressing, 2 Kings Hawaiian dinner rolls and a scoop of vanilla ice cream for desert... Thank you very much....Charlie.:10:ThumbUp

That is almost our exact Xmass dinner add shrimp cocktail appetizer and mashed potato. what is 2 Kings roll

Wrap it in 3 layers of foil, strap it to the exhaust of a 2010 Tri-Glide and go for a 150 mile trip (medium rare) or increase by 50 mile increments to get it done further....LOL
