I am planning to convert my 03 road king to a trike, I want to use a Frankenstein kit, are there any items I want to make sure I install on this build, what is the ride difference in single brake or dual.?
I have heard I need to change rake on triple tree, does rake need to be increased or decreased for best ride,
How easy do trike's tip over? and I have heard that I will need to add a steering dampener shock to front forks, but I have not found any info on them yet. I love riding on 2 wheels but I no longer have the leg strength to do that anymore. what should be main concerns doing this conversion.

May I suggest buying the entire package from them, as it has everything you need to convert the bike to a trike.
The triple trees make the trike steer easier and yes, you would want them.
You really have to work at trying to tip one over.
I've built both Goldwing and HD trikes and I've never had a request for a steering dampener.
The ride difference would be a solid axle design vs. independent suspension.
Single vs dual rear brakes would be stopping power. They stop well.
Take your time doing the conversion.

I recently converted my Slim S with a Frankenstein kit and love it. There is no need for a steering dampener. You will want the raked trees to make steering easier. It increases the rake to shorten the trail to between 3 and 4 inches. When installing the trees make sure to follow the instructions and tighten the neck more than on a 2 wheeler. Mine is stable at all speeds with no wobble. I can take off my hands at 80. I have the single rear brake and thought with the extra ground contact it would be stronger but it is similar to before the conversion. I would recommend the upgraded wider wheels they offer for a fatter look. I think they make a huge difference in the look. My wife has the standard wheels on hers. Here's a pic of mine from behind. Good luck.

Oops! I forgot the pic. Also, I have taken corners very aggressively with no indication it wanted to tip. If you don't like the fender location in my pic you can change sides and have them more on top or more to the front depending on which fender you use with which fender mount.
