You will be screwing with the back pressure and so will need to re-tune the fuel input.
Do you mean just retune the carburetor? That wouldn't be too difficult, probably need to do that anyway. My main concern is that it doesn't damage the engine.
I run 1 into 1 headers with no baffles. Love the sound, like two Harleys with open pipes. I really don't think it will "damage" the engine if jetted correct. (2 cents)
With a stock engine and a 28 pict carb, I would say go ahead and try what you like on it (removing baffles). It is not going to hurt your engine, and I doubt you will actually feel any change in the torque or performance. Highly unlikely, but if you should begin to feel a 'flat spot' in power as you accelerate, pop back in here and we can guide you through a rejet/retune on your carb.
How do you know what is jetted correct? mine has a single barrel stock 28 pict.
