I just got a 2002 goldwing trike with the heel and toe shifter. I've ordered a pingel due to a bad left leg. I understand that I can't use the heel/toe with the pingel. I can't get to the stock toe shifter with my artificial leg. Question is: can I just pull in the clutch, hit the button to put it into 1st and go from there?

I am a newbie in the process of setting up my trike, I have a pingel on my 86 Goldwing Aspencade, it has a heel toe shifter and I am using a piece of small angle iron mounted to the top part of the toe shift which in turn connects to the rod of the Pingel. This is just temporary with the angle iron, I will replace it with something nicer, like maybe a billet piece I have floor boards on it. I have shifted the Pingel through all the gears and works fine, from what I understand the Pingels also have a, what I believe is a spark interrupter also, mine is not hooked up, but as long as you back off the throttle when you shift it should shift fine. It takes the load off the trans when you back off the throttle momentarily I bought my shifter used from a guy that has had a trike for years and he never used the spark interrupter on his Harley and it always has worked out, maybe others will offer some more input for you as well. Basically yes you can pull clutch in and shift using the buttons for down and up shifting, if you choose to take off the heel toe shifter and use stock shifter. or just use the clutch lever for taking off from a start then use the up and down buttons on the Pingel with out the clutch lever only if you momentarily back off the throttle when you do shift

Looks like that will work. From what I've read make sure there is no side pull on your set up and adjustment is done by sliding the cylinder up or down in the clamp 1/8-1/16" at a time.

Exactly, made sure that it lined up perfectly and it was a breeze to adjust. just have to refine the looks, probably have the machine shop cnc something out of aluminum to make it look nicer. But hey it does work.
