Actually their not celebrating the victory over the French, It seems that the Mexicans love Mayonnaise, But only English Mayonnaise, So after the Titanic stopped at New York the next stop was to be Mexico with 20 thousand tons of Mayonnaise in it's cargo hole....

Hence,; Sinko de Mayo....
