fuel injection to carbs Question

Hello , I have a 1969 squareback that I am going to build a trike out of . The man that I purchased it from , parked because of F.I. troubles .My Question is , would I be better off trying to fix the f.i. or replace with carb ? If you think carbs, I have another question ...one or two carbs, and where to get them from ?
I can turn the pully so I know that the motor is not stuck. I am concidering cutting the car at the front of the front door. useing the tunnel and shifter as is with a 1/4 steel cover over ,for strength. rebrace the floor with 1/4 steel, remove the body while keeping engine cover and below. What do you think ?
If I can make my idea work , it should be quick and I can still design a rear body,fenders. moter,transmission,shifter,brakes,clutch are ready to go .I will only have to frame brace and build neck.
I do not know Jack about a V.W. ,if some one knows how to change out carbs ( has done it yourself ) I need to know what else may have to be stripped out or added . Any and all help will be apreaciated, Thanks Gregg:pray:
