At what temp does the sensor kic in?

I'm having issues with my fans cycling off and on at 3-5 second intervals. Took the thermostat out of the circuit and did not effect the performance. Getting ready to pull the fan system totally off my bike and bench test it. I ask Jason at what temp the thermostat switched on and he indicated 210*. Am going to do some testing with and without the thermostat and see if I can determine the problem and maybe I won't have to box 'em up for Ariz.
