I have been cooking corn on the cob in the microwave for a few years now. No more boiling on the stove after shucking ear after ear. I realized though from talking with people that many do not know about this. So for you folks who want to try something new... here it is.
LEAVE the shuck on, just pull off the corn silk. Place 4 ears in the microwave for 15 min. Set aside. Do 4 more until you have done what you need for your family. For me and Cathy I usually only do two ears and that takes 7-8 min. When you are ready to eat the corn, shuck it and enjoy. The shucks come off in usually two pulls and all of it is off. In addition the corn stays hot in the shuck until you are ready to eat it. The idea is ABOUT FOUR MINUTES PER EAR with a microwave that is high powered
 
Creamy Baked Pasta
This baked pasta and beef dish is made extra creamy with the addition of sour cream and cream cheese. It's a great dish for a big family dinner. This dish is delicious and kid-friendly!

Serves: 8

Cooking Time: 45 min
Ingredients

* 2 pounds ground beef
* 2 cloves garlic, minced
* 2 cans (15 oz. each) tomato sauce
* Salt and pepper
* 4 cups macaroni or other small pasta
* 1 package (8 oz.) cream cheese, softened
* 2 cups sour cream or plain yogurt
* 1/2 cup chopped green onion
* 2 cups grated Cheddar cheese

Instructions

1. In a large skillet, combine beef and garlic. Cook and stir over medium heat until browned. Drain fat. Add tomato sauce, salt and pepper. Bring to a boil, reduce heat and simmer 15 minutes.

2. Cook pasta and drain. Spread in the bottom of a 4 quart casserole. Top with the meat sauce.

3. In a medium bowl mix the cream cheese and sour cream or yogurt. Blend until smooth. Stir in green onions. Layer over the meat sauce. Top all with the cheddar cheese.

4. Bake at 350 degrees F for 35 to 40 minutes, until casserole is heated through.
 
Creamy Potato Salad With Bacon
Ingredients
• 3 pounds small red new potatoes (about 24)
• kosher salt and black pepper
• 8 slices bacon
• 1/2 cup mayonnaise
• 1/4 cup sour cream
• 3 tablespoons white wine vinegar
• 4 stalks celery, thinly sliced
• 1/2 cup chopped fresh flat-leaf parsley
• 1/4 cup chopped fresh tarragon
Directions
1. Place the potatoes in a large pot. Add enough cold water to cover and bring to a boil. Add 1 teaspoon salt, reduce heat, and simmer until tender, 15 to 18 minutes. Drain and run under cold water to cool. Cut into quarters.
2. Meanwhile, cook the bacon in a large skillet over medium heat until crisp, 6 to 8 minutes. Transfer to a paper towel-lined plate. Let cool, then break into pieces.
3. In a large bowl, whisk together the mayonnaise, sour cream, vinegar, ¾ teaspoon salt, and ½ teaspoon pepper. Add the potatoes and celery and toss to coat. Fold in the parsley, tarragon, and bacon before serving.
 
I need to whip up some of that potato salad!!!!! Yummmmmmmm.... :D
 
Fake Speghetti O's

2 packages of Ramen Noodles~crushed
3 cups water
1/4 cup butter
1 can tomato soup
salt and pepper

In large microwavable bowl place 3 cups water and ramen noodles. Microwave for 8 minutes, drain. Stir in butter and tomato soup. Salt and Pepper to taste, serve. you can also add meatballs or cut up hot dogs.

:blush:This came about because 3 days short of pay day this is what I had to feed my two boys, they loved it and learned to make it as a snack for after school.:D

U can make this and it is great when u don't know what time dinner is going to start . It can cook for 3 hr.s if it has to .

(World Famous Spare Ribs)
( or Boneless Chicken )


1) 4 lbs of Country Style Pork Spare Ribs
2) 1 large can Hunts Tomato Sauce
3) 1 Large Onion (chopped )
4) 1 Large green or red pepper ( chopped) (I like the red )
5) ¼ cup of oil
6) 2 tablespoons Molasses
7) ¼ tablespoon Hot Sauce
8) 2 tablespoons of Soy sauce
9) 2 tablespoons of Worcestershire sauce
10) 2 tablespoons of Molasses
11) 3 tablespoons of Brown sugar
12) ¼ cup of Vinegar (white or Red wine works too )
13) Pinch of Dry Mustard
14) 16 oz of Ketchup
15) Garlic powder

Place Ribs in Baking dish ( aprox.16X10) sprinkle with garlic powder. Set oven for 375 deg. And bake for 50min.
While this is baking, in a large pan ( I use an electric skillet ) fry the onions and peppers in the oil until onions are soft. Add all the rest of the ingredients in any order, stir each time you add.
Simmer until the ribs have cooked for 50 min.
Drain excessive grease from the ribs, pour the tomato mixture over the ribs. Move the ribs around a little in the mixture. Continue cooking the ribs 15 more min. The beauty of this is, if your guests are running late, the ribs can cook for up to 2 hours. Also re-heats good too.
I like to make 3 or 4 cups of rice and pour the sauce over it.
