Last night for supper, we had our first pot of Tortellini Sausage Soup of the season. This soup is the easiest, most delicious thing going when the weather cools off (which it finally did)!
1 pound hot (or mild) Italian sausage (if you use hot, you can leave out the garlic)
1 large onion, chopped
(1 or 2 cloves garlic, minced)
1 28-oz can crushed tomatoes (I use the ones seasoned with garlic, oregano, and basil, but you can season them yourself if you like)
3 14-oz cans beef broth
2 carrots, sliced thin
2 zucchini, sliced thin
2 cups cheese-filled tortellini (cheese and spinach or tri-colored are best) (1 13-oz package)
½ cup freshly grated Parmesan cheese
Slice casings off sausages and break into chunks. Brown the sausage with the onion and garlic in a large pot. Drain meat and stir in crushed tomatoes, beef broth, and carrots. Simmer 30 minutes. Stir in zucchini and tortellini. Simmer 10 minutes.
Serve with freshly grated Parmesan cheese on top and crusty bread on the side. Enjoy!!!
This is one of those things that is even more delicious the second day, but you might want to have some extra tomatoes or broth on hand to add to "soup it up" a little more.
