Insurance companies value motorcycles based on NADA figures and generally allow $3K additional for accessories. Your conversion kit is an accessory, and is included under the $3K figure. Unless you got one hell of a deal, you will be under-insured.

You need to add additional accessory coverage in order to not be under-insured. It cost me $4 per month to bump the accessory coverage from $3k to $12K on my '12 Wing MotorTrike.

Harley guys don't have as big a problem since the Tri Glide is not a conversion. But the guys that have them frequently increase their accessory coverage.
 
My policy is with Farmers Insurance. They placed a 'total' value on my trike that I agreed to and we added another $5K to cover my trailer.
 
Our insurance covers the motorcycle as it came from the factory, plus $3000 included in the policy for "customization". I was glad we had accessory coverage after dealing with the insurance after the demise of Her Purpleness, our last trike. I learned first hand the value of having enough coverage for non-stock accessories. We almost had enough to cover everything, (We were only about $200 short) When we got the new trike it took less than an hour to find more than $4000 in accessories.
On the insurance for our present trike we have a "customization" rider for $17,000 on top of the standard $3000. This includes non-stock accessories, the gear we are wearing, the trailer if it is attached and contents. Cost for the rider is $103/year.
