Easy Cheese Enchiladas

Makes 8-12

8-12 Corn tortillas (depends on how hungry you are)
1-1/2 lbs block of cheddar cheese (depends on how full you make the enchiladas & store bought *pre-grated cheese doesn't work very well)
1 large onion

Easy Cheese Enchilladas


1 large can of wolf brand chili without beans

Pre-heat oven to 350

Use a pyrex glass dish--6 x12. No Pam spray needed. Grate cheese. Chop onion. In a sauce pan heat can of chili on low.

Heat a small amount of water in a small skillet. Using tongs that are not sharp, dip one tortilla into water until soft. Takes about 2 seconds. Don't get too soft or it will fall apart. Place tortilla in Pyrex dish. Fill with your own desired amount of cheese and onions. Roll tortilla. Do the same thing with all of the tortillas. (optional--sprinkle more onions over rolled tortillas). *Pour heated chili over all the tortillas. Place in oven and bake for 20-30 minutes or until cheese is melted and chili is bubbling. Remove from oven and if desired-- sprinkle more cheese on top. Serve while hot.
